Best-Ever Banana Cake: The only recipe you need…

Banana cake is a soft and tasty dessert for breakfast, for tea or together with coffee. Made with banana pulp and chopped nuts, this fruit cake is also suitable for children and can be a great snack idea. Banana is a fruit good for eating on its own, but ideal for making desserts.

Ingredients :

  • 370g (13 oz) ripe bananas, peeled weight
  • 8g (2 tsp) baking powder
  • 125g (1/2 cup) vegetable oil (such as sunflower or canola oil)
  • 215g (1 3/4 cups) all-purpose flour (UK: plain flour)
  • A pinch of salt
  • 200g (1 cup) granulated sugar
  • 2 medium eggs
  • 60g (1/2 cup) walnuts, chopped
  • 1 vanilla pod (or 1 tsp vanilla extract)

How to Prepare Best-Ever Banana Cake:

  1. To prepare the banana cake, chop the walnuts with a knife and set them aside in a small bowl. After that, turn to the bananas. Peel them and cut them into rounds that are not too thick. Pour them into the blender and blend to a smooth pulp; set aside. Process the eggs with an electric whisk, adding the sugar a little at a time.
  2. Continue blending the mixture until it has a frothy consistency and a light color. You can then add the flour sifted together with the baking powder a little at a time to the mixture, so as to avoid the formation of lumps.
  3. Then add the salt, the oil by pouring it in at a trickle and the seeds of the vanilla pod.
  4. Turn off the whisks and pour in the banana puree, mix well with a spatula, after which do the same with the chopped walnuts. Pour the batter into a previously buttered and floured 22-cm-diameter cake pan.
  5. The cake is ready to be baked 13 in a static oven preheated to 180° C (350°F) for about 45 minutes. You can do the toothpick test to make sure the cake is ready, then take it out of the oven and let it cool to room temperature. Serve the banana cake with a sprinkling of powdered sugar to taste.
