Healthy Chia Seed Cookies: Easy, Delicious, Snacking…

Chia seed cookies are a savory variation perfect for serving as an appetizer or to accompany an aperitif. These seeds are rich in nutritional properties and give the cookies a very special taste and appearance, while the Parmesan cheese will give a strong, savory note!

Ingredients:

Approximately 35 Cookies:

  • 8 large eggs
  • 250g (2 cups) all-purpose flour
  • 250g (1 cup) unsalted butter, cold and cubed
  • 125g (1 cup) potato starch
  • 125g (1¼ cups) Parmigiano Reggiano PDO, finely grated
  • 80g (½ cup) chia seeds

How to Prepare healthy Chia Seed Cookies:

  1. To prepare chia seed cookies as first thing boil the eggs starting with cold water and cooking them for 8 minutes from boiling. Then drain them, let them cool and peel them. At this point take out only the yolks, the egg whites will not be needed for this recipe but you can use them to prepare stuffed eggs, such as spring eggs.
  2. Cut the cold butter into cubes and place it in a blender fitted with blades; add the flour, starch and blend until crumbly.
  3. Then also add the parmesan cheese, firm egg yolks and chia seeds. Blend again until the ingredients are blended.
  4. Then transfer the dough to a lightly floured surface and knead it a few minutes. Then wrap it in plastic wrap. Let it rest in the refrigerator for at least 40 minutes. Then take the dough ball and roll it out on a surface with a little flour!
  5. You will need to get a thickness of 1 cm. Using a festooned cookie cutter with a diameter of 5 cm, carve out the cookies.
  6. and place them as you go on a baking sheet lined with parchment paper. Bake in a preheated static oven at 180° C (350°F), on the low shelf for about 25/28 minutes, then take them out of the oven and let your chia seed cookies cool before moving them to a tray.
