Healthy Zucchini Pizza Skillet: A Quick Recipe That Will Win You Over…

If I were asked to list my top 5 favorite dishes, pizza would definitely be among them… and since, alas, it is not possible to eat it every day, I am always looking for lighter but at the same time tasty alternatives. That’s why today I want to share with you the recipe for pan-fried zucchini pizza, a fresh, tasty alternative and what’s more ready without using the oven!

Ingredients:

  • 2 medium zucchini (courgettes)
  • 45g (1/3 cup) potato starch or cornstarch
  • 50ml (3 1/2 tablespoons) egg whites
  • 200g (7 oz) tomato sauce
  • 200g (7 oz) provola cheese (or provolone)
  • 10 fresh basil leaves
  • Salt, to taste
  • Extra virgin olive oil, as needed

How to Prepare Healthy Zucchini Pizza Skillet:

  1. After washing the zucchini, grate them with a large-hole grater, then place them on a clean tea towel.
  2. Squeeze the grated zucchini until excess water is removed.
  3. In a bowl, combine the grated and squeezed zucchini with the starch, egg white, and salt and mix until firm.
  4. In a hot frying pan put a drizzle of evo oil, distribute the zucchini mixture evenly and cook for about 5 minutes. After this time has elapsed, turn the base with the help of a plate or lid.
  5. At this point, add the tomato sauce and slices of provolone cheese, cover with lid, lower the heat and let cook until the cheese melts.
  6. Transfer to a serving plate and finish with fresh basil previously washed and dried and, if desired, a drizzle of raw evo oil.
