Ingredients :
- 3 medium zucchini (courgettes)
- 2 eggs
- 1 medium onion
- 1 medium potato
- 50g (1/2 cup) grated Parmesan cheese (optional, for extra flavor)
- 50g (1/2 cup) breadcrumbs
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
- Herbs of choice (parsley, basil, or thyme)
How to prepare quick and Delicious Zucchini Frittata:
- Prepare the zucchini and potatoes : wash the zucchini thoroughly, trim them and grate them with a coarse-hole grater. Place them in a colander, add a pinch of salt and let them sit for about 15 minutes so that they release excess water. Then squeeze them well with your hands or a clean cloth. Peel and grate the potato as well.
- Sauté the onion : peel the onion and chop it finely. Heat a tablespoon of oil in a nonstick skillet and sauté the onion over medium heat until soft and translucent. Let cool.
- Prepare the mixture : in a large bowl, beat the eggs with a fork. Add the grated Parmesan cheese, squeezed zucchini, potato, sautéed onion, a pinch of pepper, and chopped herbs. Mix everything together well.
- Compose the pie dish : preheat the oven to 180°C (350°F). Line a baking dish with baking paper or lightly grease a baking dish. Pour the mixture into the baking dish and level it with a spatula. Sprinkle the surface with breadcrumbs to get a golden crust.
- Bake in the oven: Bake the pie pan and bake for about 30-35 minutes, or until the surface is golden brown and the center is firm. You can check for doneness by sticking a toothpick in the center: if it comes out dry, the cupcake is ready.
